Can You Make Ice With Tap Water in Rosarito?

Freezing does not kill anything. Whatever is in your water is in your ice.

This is the one people get wrong most often, and it is an easy mistake to make. Ice looks clean. It comes out of a machine. It feels like a processed product rather than a glass of tap water.

It is a glass of tap water.

What freezing actually does

Cold slows bacteria down. It does not kill them. Freeze water with bacteria in it and you get frozen bacteria, which wake up in your drink as the cube melts.

Boiling kills. Freezing pauses.

This is why the old traveller advice about avoiding ice in Mexico exists. It is not superstition. The ice in a restaurant is only as safe as the water it was made from, which is why most decent places here buy ice from a purified ice supplier rather than making it themselves.

Why the ice maker in your fridge is the problem

If your fridge has a plumbed ice maker or water dispenser, it is fed from the same line as the rest of the house. It has a small filter in it, usually a carbon cartridge, which handles taste and chlorine and does nothing about bacteria.

So the fridge filter makes the water taste better and gives you no protection at all against what actually matters here.

Worse, that line and the ice bin sit at a temperature where anything that gets in has time to establish itself, and almost nobody cleans an ice bin.

The white cloudy cubes

If your ice is cloudy and white in the middle, and leaves a chalky film in the bottom of the glass as it melts, that is dissolved minerals. Baja water is hard. It is not dangerous, it looks bad and tastes worse, and it is a decent visual signal that your water carries a lot of dissolved solids.

Softening deals with the hardness. It does not reduce the dissolved solids overall. Only reverse osmosis does that, and RO ice is genuinely clear.

What to do about it

If you are only worried about how it tastes and looks, an RO system at the kitchen tap gives you clear ice and better drinks, and you fill trays from the RO faucet.

If you want the fridge to make it automatically, that needs a line run from the RO to the fridge. It is a small job, and it is worth knowing before you buy that only a system with a storage tank can do it. A tankless RO cannot feed a fridge.

If you are worried about bacteria rather than taste, the fix is upstream. UV at the point where water enters the house means the ice maker, the trays, the shower and every tap are all fed from the same treated line.
